Almond Goji Berry Protein Ball


Inspired by the holidays we wanted to create a red protein snack and thought of using beets as the natural food coloring, almonds as our binding healthy fat, along with dried goji berries to add a sweet taste to this savory snack. We also ended up adding lemon zest, lemon juice, and swirls of almond butter to make each bite a blast of flavor. Perfect as a daytime grab-n-go snack or can be used as a pre, during, and/or post performance boost.

 

Recipe

4 Cups Almond meal

6 Scoops Vanilla Protein Powder(Thorne is the brand we trust to provide pure and safe supplements for our athletes)

1/2 Cup Pumpkin Seeds

1/2 Cup Goji Berries

2 beets(pre-cooked)

1 lemon, zested and juiced

3 tablespoons Organic Maple Syrup

1/4-1/2 cup Water. A cookie dough consistency works great

1/2 cup Sliced Almonds

 

Directions

In a large bowl mix almond meal, protein powder, goji berries, and pumpkin seeds first. Puree beets with juice from lemon and water. Add beet puree, maple syrup, and lastly swirls of almond butter to dry ingredients while mixing with spoon. Use gloves to form into desired ball size. In a separate small bowl mix lemon zest with sliced almonds then roll formed balls over toppings to coat the outer layer. Place in refrigerator for a 1-2 hours to allow ingredients to bind. Grub down!​
